Ingredients:

9 oz sifted flour
4 1/2 oz unsalted butter
7 tbsp water (about)
4 fresh, juicy lemons
5 1/4 oz powdered sugar
4 medium eggs
2 oz unsalted butter
Method:
To make the crust: Mix the flour and butter by hand until it becomes like fine, even sand. Add a little water to make the dough into a ball. Roll out this dough and place it in a buttered pie plate. It should be easy to move this dough over to the plate. To make the filling: Remove the pulp and juice from the lemons and purée them. Make sure the seeds have been removed. Add the sugar, whole eggs, and melted butter to the purée. Pour the filling into the crust. Don't worry if it is a bit liquid, it will thicken as it cooks. Bake in a preheated oven at 350°F for 40 minutes.
