Ingredients:
(Serves 4)
2 1/4 lbs very ripe tomatoes
1 small cucumber
1 green pepper
1 red pepper
1 white onion
2 cloves garlic
1 small chili pepper
1 lemon
Olive oil
Salt and pepper
Method:
Blanch and chill the tomatoes to peel and seed them. Mince the onion and garlic. Peel and dice the cucumber. Cut the peppers into fine strips. Combine all the vegetables in a soup tureen. Add the olive oil and season with salt and pepper. Add two cups of cold water and the juice of one lemon. Cover the tureen with plastic wrap and chill in the refrigerator for two hours.
