Ingredients:

2 red peppers
2 green peppers
2 eggplants
2 zucchini coarse salt
4 tablespoons olive oil
Mixed dried herbs
Method:
Preheat the oven to 350°F. Cut all the vegetables into 1-inch pieces. (Cut the peppers into strips 2 inches long.) Arrange the vegetables on a baking sheet. Season with salt and herbs, sprinkle with oil, and bake for 30 minutes.
