Sweet and Sour Shrimp

SWEET AND SOUR SHRIMP

Ingredients:
(Serves 4)
1 clove garlic
1 green pepper
2 tomatoes
1 small can pineapple tidbits
3 1/2 tbsp chicken stock (water and bouillon cube)
3 1/2 tbsp juice from the can of pineapple
3 1/2 tbsp vinegar
1 tablespoon soy sauce
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons cooking oil
17 1/2 oz cooked shrimp

Method:
Mince the garlic and dice the pepper. Peel and dice the tomatoes. Sauté the garlic and pepper in oil. Add the tomatoes and the drained pineapple. Add the stock, pineapple juice, vinegar, soy sauce, and sugar. Dissolve the cornstarch in a little water and add it to the sauce. Simmer over medium heat until the mixture thickens. Stir in the cooked shrimp. Serve hot.
