Ingredients:
(Serves 3)
6 eggs
3 1/2 oz bacon
2 medium onions
1 green pepper
3 button mushrooms
Grated Swiss or Gruyere cheese
Cherry tomatoes
Method:
Peel the onion and cut into small pieces. Cut the pepper into small pieces as well, and add it and the onion to the pan and sauté until just golden. Chop the mushrooms finely, add them to the pan, and cook until browned. Beat the eggs and add them to the pan, reducing the heat.
When the omelette is set, sprinkle generously with grated cheese. Cut the cherry tomatoes in half and use them to garnish the omelette.
